The Zagat survey has recently named Fearing's restaurant inside the Dallas Ritz-Carlton No. 1 in hotel dining. Fearing's is the product of chef/partner Dean Fearing, who is a longtime supporter of Viking and Milestone Distributors.
Fearing’s was described by travelers as having dinners that are “last-meal worthy.” Diners at Fearing’s have the opportunity to sample reknowned Chef Dean Fearing’s exclusive menu.

Food Network star Giada DeLaurentiis’ home, including her full Viking kitchen, is featured in the December issue of Architectural Digest. 

Giada, her husband, Todd Thompson, and their daughter, Jade, enjoy their Viking range, double ovens and refrigeration. Morrison named 2008 Showroom of the Year by Supply House Times

Morrison, a Milestone dealer, in Houston, Texas has been named one of the recipients of Supply House Times magazine's Showroom of the Year award for 2008.
Morrison is headquartered in Ft. Worth, TX, and was founded in 1917. They operate over 80 branches in Texas, New Mexico, Oklahoma, Kansas and Louisiana. They have grown their showroom business to more than 30 locations.

Grilled Round Steak

It is finally starting to cool off here in Texas, and there is no better way to enjoy the last days of summer than to make good use of that Viking grill! Below is one of Chef Scotty's favorite marinade recipes.

“It is Good to Be the King” Grilled Round Steak
2 beef round steaks, 2” thick
2 bunch green onion
1 bunch cilantro
6 cloves peeled garlic
1 each jalapeno
½ cup soy sauce
½ cup Worcestershire sauce
juice from 3 each limes
1 6/Pack Negro Modelo Beer (one for marinate / 5 beers for chef)
1 ½ cup vegetable oil
1/4 cup Sesame Oil
1 tsp. Viking Smoked Salt
1 tsp. black pepper
Instructions:
In a blender, combine all ingredients except oil. Pulse first, then blend thoroughly adding oil a little at a time to emulsify.
Pour over the round steaks in baking pan or large zip-lock bag and marinate for 6 to 8 hours. Pre-heat one side of your Viking grill on high and the other on low. Sear the steaks on each side for 3 minutes on the hot side of the grille, then move them to the cooler side to rest and finish, an other 5 minutes for medium rare. It is important to close the lid of your Viking grill during the rest phase.

Texas Peach Cobbler

If you are looking for a way to enjoy the last peaches of the season, Chef Scotty's Texas Peach Cobbler made in the Viking Electric Smoker Oven should fit the bill. Bon Appetit!
Texas Peach Cobbler
6 Fresh Peaches
2 cans Quality Peach Pie Filling
1 box Spiced Cake Mix
1 stick Unsalted Butter
½ cup Chopped Pecans
PREPARATION:
Pre-heat Viking Electric Smoker Oven temperature to 375*.
( Temp. side only / no Smoke!)
Rinse each peach with cold water, let dry on a kitchen towel. Take each peach, cut a small piece off the bottom, about the size of a quarter, to allow the peach to stand on its own. With a thin pairing knife, cutting down from the top, create a circle around the stone. Cut away the flesh within the circle to expose the stone, Twist the stone and gently remove it from the peach. With a small spoon, clean out the opening of each peach and place them in a small baking dish. Fill each peach with the pie filling.
In a large bowl, mix the cake mix, room temperature butter and pecans together. Cap each peach with a generous mound of the mixture. Sprinkle the remaining mixture over the top and around the side of the peaches. Bake cobblers on the middle shelf for 45 minutes or until the topping is golden brown. Even though the smoke element of the oven is off, residual smoke flavor will become a magical part of the cooking experience! Remove from oven and sprinkle top with cinnamon.
Serve with Blue Bell Country Vanilla Ice Cream (no substitutions)
