Milestone Barbecue Sauce
INGREDIENTS:
1 cup strong black coffee
1 cup Worcestershire sauce
1 cup catsup
1/2 cup cider vinegar
1/2 cup brown sugar
3 tablespoons hot chile powder
2 teaspoons salt
2 cups chopped onions
1/4 cup chopped chile peppers: jalapeno, Serrano, habañero, etc.
6 cloves garlic, minced
METHOD:
Simmer 25 minutes; puree or blend. Use as a marinade and as a baste when barbecuing.

Milestone Culinary Arts Center Executive Director featured in the Dallas Business Journal

Sharon Van Meter, Executive Director of the Milestone Culinary Arts Center, was recently featured in an article in the Dallas Business Journal. Excerpts from the article appear below.
A graduate of Le Cordon Bleu in paris, France, Van Meter has more than 30 years' of culinary experience. Today, she's using her expertise to whip up new revenue-generating concepts at her Dallas-based company, SVM Productions.
Three years ago, she signed on as executive director of Milestone Culinary Arts Center; located in The Viking Cooking School and Showroom on McKinney Avenue. The vision of Milestone Distributors management was to allow visitors to experience top-of-the-line Viking kitchen equipment.
SVM Productions runs all Milestone Culinary Arts Center events, which now include coporate team-building classes, fundraising dinners, television shoots, the Stainless Steel Chef class and more extensive cooking classes. Says Van Meter on team-building, "Cooking is the ultimate team-building activity; nobody can do it all themselves."
The Viking Cooking School continues to be a big revenue maker, despite Van Meter's expectations that the economic climate would cause attendance to dip. The trend toward more home cooking is causing many of the classes, which range from $59 to $129 to sell out.
Additionally, local not-for-profit organizations often host their fundraising events at Milestone, which often underwrites part of the cost.
Lately, Van Meter was recently named the first female director of the Texas Chefs Association, an organization dedicated to the advancement of the culinary profession. She has also created two new MCAC divisions: a continuing education collaboration with El Centro College to hold cooking classes on Sundays and Mondays, and the Milestone Farmer's Market, in partnership with EatGreenDFW.com, North Texas' only online farmer's market.

Time Magazine to feature Viking Gravity Feed Smoker

The new Viking Gravity Feed Smoker will be featured in the June 22, 2009 print edition of Time magazine, which hits newsstands Monday, June 15th. In the story, the writer calls the gravity feed smoker “a sleek, 375-lb. (170 kg) stainless-steel vault built to resemble a high-end refrigerator.”

U-Line undercounter refrigeration featured in several publications

U-Line undercounter refrigeration has been popping up all over print publications this summer! Here are several noteworthy mentions:
The Better Homes and Gardens Special Interest Publication, "Beatutiful Kitchens", recently highlighted the undercounter Wine Captain, select stainless steel models that are UL approved for outdoor use, and the energy efficient nature of U-Line models.
Another Better Homes and Gardens Special Interest Publication, "Kitchen and Bath Ideas Products Guide," features the U-Line Wine Captain in a special section about wine storage. Wine has become more available and more affordable in recent years, and with all the interest in drinking wine, more people are investing in methods to store wine that preserve its quality. The Wine Captain is touted to keep "up to 43 bottles at stable temperatures and humidity. A three-bottle caddy slides out for transport. Maple-trimmed racks can be stained."
The U-Line beverage center was shown in a real outdoor makeover feature in Better Homes and Gardens "Outdoor Rooms." An outdoor fridge keeps beverages handy for guests, minimizing trips between the outdoor kitchen and the main house.

Everything BBQ “Fired-Up Vendor Cook-off”

Wanted to share some pictures of Chef Scotty's trip to Oklahoma City to participate in Everything BBQ's 3rd annual "Fired-Up Vendor Cook-off." Representatives from a great line-up of grill manufacturers were at this fun event showing off ways their grill can be used, the benefits of cooking on their grill, and special techniques to make your grilling the best it can be.
Chef Scotty took home 2nd place with his globally inspired menu. Thanks to all who came out! What a great time!
